How the conversion works

Every unit is stored as an exact number of milliliters, so any conversion is one multiply and one divide:

The defaults convert 3 tablespoons to milliliters. A US tablespoon is 14.786765 ml, so 3 × 14.786765 = 44.36 ml. That is a quantity you reach for constantly — the fat in a small roux, a jar of vinaigrette, a spoonful of oil scaled up three times. Because the milliliter figures are the shared reference, converting teaspoons to cups or fluid ounces to deciliters uses the same two operations with no special cases.

Where the kitchen spoon came from

The spoon on your measuring set is older than any measuring system. In early modern Europe a tablespoon was simply the largest spoon in a table setting, and a teaspoon was the small spoon that stirred tea after Dutch traders landed the first cargoes in Amsterdam around 1610. Neither carried a fixed volume; the size depended on the silversmith. Precision arrived through medicine. During the eighteenth century both spoons were folded into the apothecaries' system that physicians used to write prescriptions, where the tablespoon, cochleare majus, equalled four fluid drams — half a fluid ounce — and the teaspoon, cochleare minus, equalled one fluid dram, an eighth of a fluid ounce and so a quarter of a tablespoon rather than a third.

That half-ounce tablespoon is the direct ancestor of the 14.786765 ml figure this converter uses. The three-to-one ratio came later, and from cooks rather than druggists. After the Commutation Act of 1784 cut the British duty on tea from 119 percent to 12.5 percent, tea stopped being a smuggled luxury, cups and the spoons that stirred them grew, and by the 1850s the culinary teaspoon had drifted up to a third of a tablespoon while the apothecaries' teaspoon stayed at one fluid dram. A third of half a fluid ounce is the 4.92892 ml teaspoon still in use.

Fannie Farmer and the level spoonful

For most of the nineteenth century American recipes still measured by feel: butter the size of an egg, a heaping spoon of flour, enough milk to soften. Fannie Merritt Farmer, who became principal of the Boston Cooking School in 1891, pushed the level measurement into the mainstream with her Boston Cooking-School Cook Book and became known as the mother of level measurements. Little, Brown and Company expected so little of the book that it printed the 1896 first edition of 3,000 copies at Farmer's own expense; it went on to sell in the millions. Insisting that a cup or a spoon be filled to the rim and struck flat is what turned a recipe into something a stranger could repeat in another kitchen. A converter like this one only means anything because Farmer and her contemporaries first agreed that a spoonful should be a defined amount rather than a gesture.

The gallon behind the American cup

The US customary units trace back to the English wine gallon of 231 cubic inches, in customary use since at least the sixteenth century and put into statute under Queen Anne by an act passed in 1706 that took effect on 1 March 1707. The United States kept that gallon after independence and made it the federal standard in 1836, while Britain replaced it in 1824 with a larger imperial gallon defined as the volume of ten pounds of distilled water weighed in air at 62 degrees Fahrenheit. The split is why a US fluid ounce is 29.5735 ml and an imperial fluid ounce is 28.413 ml, a gap of about four percent, and why the American cup — half a US pint, one sixteenth of a gallon — works out to the un-round 236.588 ml rather than a tidy figure. There is a second American cup to keep straight: nutrition labels use a legal cup of 240 ml defined in federal regulation. This tool uses the 236.588 ml customary cup that recipes actually assume, not the labeling cup.

The metric side

Metric volume is a product of the French Revolution. The litre was defined in 1795 as one cubic decimetre, the space inside a cube ten centimetres on each side, which makes a millilitre exactly one cubic centimetre. Because the system is decimal, milliliters, deciliters and liters convert by shifting a decimal point: one liter is 10 deciliters or 1,000 milliliters, with nothing to memorize. That regularity is why most cooks outside the United States write liquid quantities straight in millilitres and rarely own a set of cups.

Spoons and cups in US measure

The tablespoon that is not 15 ml

Most of the English-speaking world treats a tablespoon as 15 ml in practice, close enough to the US customary 14.79 ml this tool uses. Australia is the exception. When the country went metric in the 1970s, its Metric Conversion Board set the tablespoon at 20 ml — four 5 ml teaspoons rather than three — for the clean four-to-one ratio, and 20 ml remains the Australian standard today. A Melbourne recipe asking for 2 tablespoons of gelatin means 40 ml, roughly a third more than the 30 ml a UK cook would measure or the 29.6 ml a US cook would, enough to change whether a dessert sets. British recipes mostly sidestep the problem by listing liquids in millilitres and dry goods in grams, so a UK cake reads 60 ml rather than 4 tablespoons. Canada and New Zealand settled on the 15 ml tablespoon in their own metric conversions, which leaves Australia the lone holdout.

What this converter leaves out

These are volume units, so they do not become weight on their own. A cup of water is about 237 g, but a cup of all-purpose flour is around 120 g and a cup of granulated sugar close to 200 g, with finer caster sugar nearer 190 g, so swapping cups for grams needs a density figure — the cups-to-grams converter does that. Sticks of butter sit aside too: one US stick is 8 tablespoons, half a cup, 113 g, and it lives on American wrappers rather than in any measuring system, so it is not a unit here. The 250 ml metric cup used in Australia and New Zealand is also left out on purpose, since it differs from the 236.59 ml US cup this converter assumes.
